I have published several pages but for some reason, they wont show up under their parent (or anywhere really) in their menu. So they can't be accessed unless someone knows the url to it.
I'm not sure what I'm doing wrong here.

you can see "MEDICAL SERVICES" only has one sub page, but in reality it should have like 7.
Have you tried:
- deactivating all plugins to see if this resolves the problem. If this works, re-activate the plugins one by one until you find the problematic plugin(s).
- switching to the Twenty Ten theme to rule out any theme-specific problems.

I just tried the plugin one, didn't help.
If I switch themes, will it loose customization of the one I already have on?

It shouldn't. These are saved in your database.

so if I switch themes, and switch back, things should look the exact same?

I switched to twenty ten and genesis; both showed all my links. I am currently using the outreach theme. could I modify this one to display all my subpages like the other themes did?

You can modify most themes to add/change anything you want. It really depends upon your comfort level with HTML, PHP, CSS and WordPress template tags.
