Privacy? Your site hosts email function…

While testing this plugin, I noticed that when you go to send a page or post in an email using this plugin, your website is hosting the actual code that performs the functions. Is there privacy with this plugin? I am setting up printing availability for a non-profit that assures their members that their information is private; it’s important that I am able to make sure we uphold that standard for their members.
