   Long winded title, I know.

   Basically, I'm using get_tags as normal to get a list of all tags used.

   It works perfectly. But my next desired step is to limit that list so that it only contains the tags used on posts within a certain category.

   Anyone know a way to do this?

   yes there are some plugins for this. Just can not remember the names
