I wonder if anyone could recommend a plugin (free or paid. free preferably or not expensive) which can manage online bookings for a course. In terms of functionality all is needed is a calendar, so the person can select the day, input their details and proceed to make payment. Any ideas?

You should try gravity forms, which is inexpensive and open source, give it a spin http://jkud.me/gravityf
It's basically an advanced form builder which has all of the functionality you specified. Its easy to use and drag and drop and integrates with paypal for payment.
