Perhaps I'm doing something wrong, or not doing something, but I installed WPTouch in the hope that I could serve iPads and iPhones easily, but after I installed and activated the plugin I still see, on an iPhone simulator, my original site theme.
I've been through the settings carefully. Am I missing something here? The plugin is installed but not working, apparently.
One thing that may be affecting this is that my site is behind a CDN, and also uses W3 Total Cache.
Any thoughts?

Most iPhone simulators fail to work with that plugin. I have it set up in a blog I manage, and when I access it through iPhone, the layout changes completely.
You should probably check on an actual mobile phone.
Your CDN should not interfere with WP-Touch, but W3 Total Cache could. You might have to resort to a browser detection script and load different versions of your site accordingly, but I would test the site on an actual mobile phone as a 1st step.
Yes, Marventus is correct— they fail because WPtouch uses user agents to determine whether to show the mobile theme or not.
So you'll need: iPhone Simulator via Apple's developer tools, a user agent switcher plugin for Firefox, or to enable the Develop tool bar in Safari to have a look.
