I have set up the mobile plug in but I think I do not understand a very basic thing for this to work. I created the mobile folder (m.mysite.com) but what goes in it to make the system work? The instructions gloss over that saying it must be set up to resolve but resolve to what? Do I forward the subdomain some place?
Any help is appreciated.

You need to setup the m.<yourdomain>.com DNS entry to point to your server IP. You then need to setup a virtualhost for m.<yourdomain>.com correctly on Apache to forward requests to your wordpress site. Finally, you will likely need to modify the .htaccess file to rewrite requests from specific user-agents to go to m.<yourdomain>.com instead or http://www.<yourdomain>.com
If all of that was complete gibberish to you, I recommend you look at using the WPtouch iPhone Theme It is a very simple install and it 'Just works'.

Thank you so much. It was mostly gibberish, but at least it gives me a place to start. I will see if I can figure it out.

@mgolawala - I understand what I need to do, but I'm wondering how it "translates" into my 1and1.com control panel.
I can set up my subdomain to "forward," or I can just point it directly to the correct folder within my webspace.
After that, I'm not sure if I even have access to any Apache settings.
Does anyone know?

Set the subdomain to point to the same folder as your main domain. There is no need to modify .htaccess, the pluging will detect mobile user agents and redirect them to mobile versions of the pages.
If you want WPMP to work just like WP_Touch set Switcher Mode to "Browser Detection" That will work out of the box with no need for a subdomin.
