For everyone else trying to find a Google Analytics plugin for Multisite, this one appears to fit the bill and allow input of unique analytics code and display on the individual pages for that blog.

Is there a Google Analytics plugin that would allow me to specify a GA profile once for all blogs?

As far as I've looked around, no plugin allows to track multiple blogs (WordPress MU) for a single GA profile using subdomain tracking.
The only one is a "premium" one (you pay for), available here:

It turns out that http://wordpress.org/extend/plugins/google-analytics-multisite-async/ does fine with multisite.
