Hi,
I have a client who is moving from a multi-blog install down to a single blog. Can I use this plugin to copy all their posts from the various subdomain blogs to the main blog (and then delete the originals)?

That sounds like an awful lot of work in comparison to just using the Tools > Import/Export option. If you don't know about it, it imports or exports an xml file of all the blogs posts and pages, all at once. If you don't want it to import/export pages, you can just delete all the sub-blog's pages first.
But yeah, your original idea technically should work as well. You'll just want to make sure not to select the option to have all the child posts deleted when the original posts are deleted.
The thing is, to copy all the posts this way you'll have to manually go into every post and broadcast it upstream, which is horribly tedious.
I think you should go with the first option. :)
