   Almost what I was looking for!
   Would you ever build in the functionality to assign multiple categories and tags to single images and multiple images to a single category/tag?
   ...so one could build smart galleries?

   WordPress has built-in functionality to associate any taxonomy with any post_type. So, in theory, you could create a taxonomy called 'gallery' and assign it to the 'attachments' post type thus allowing images to appear in multiple galleries.
