Just wondering how pages are handled, is an email sent as scheduled in the settings regardless of whether the page has been updated? I wanted to ask the same about posts, will the same post get sent if it is updated? or is it only new posts which get sent?

WordPress Pages are handled in the same way as Posts provided you have enabled notifications to be sent for page in the Settings area.
Notifications are not sent for updates UNLESS you revert the past or page to a draft state first and then publish it again.
