I would like to edit the plugin code, but as an override. Does WordPress have the option of Template overrides? Can I do that with this plugin. This plugin uses TABLE tags and I would like to change that without editing the original code.
I am familiar with Joomla as a CMS and they have a great Template override system so that any edits to Plugins will not be changed when I upgrade.
Please advise.

Not exactly, but close. Could this functionality be used for installed plugins? Does the plugin creator have to allow this functionality?
Not that I'm aware of, no. Just themes.
Of course, you have the plugin source. You can certainly hack it up as you see fit :-)
