I am excited to try the Relevanssi plugin, but building the index for my 25,000 posts is quite tedious, namely, clicking "continue indexing" over and over.
Is there a command I could run in crontab to do this?

Sorry, but no.
Also, there's some evidence that Relevanssi might not work properly with such large numbers of post.
