I have a website with tags (taxonomies) that are all in the singular form. I was wondering if it would be possible to have the option to include plural forms of the words in the search results.

Exactly what you want to happen?

For example, if someone searches "cat" the results for "cats" will also be displayed.

That would require an automatic method to recognise whether a word is plural or singular and if it's singular, convert it to plural. That's getting awfully complicated already, especially considering you'd have to do it in several languages.
You could try using the synonym feature.
