   I am using ProjectManager for a football (soccer) league. The plugin will not allow any dates of birth earlier than 1970 but simply defaults to today's date. Can anyone tell me how to fix this?

   Yes, just edit the year "1970" in the dataset-form.php file, to whatever you like, it should be on line 57.
