Is it possible to save the data fields and configuration/settings in addition to the data? I know I can export the data. I have had to kill my site more than 8 times in the development stage because I'm doing some complex things. Now and then I have to start over. Each time, I have to reconfigure the entire database management before I can add in my (currently 9) contacts again.

All the plugin setting are kept in the wp_options table in an option named: participants-database_options
You can also export all three tables the plugin uses, then when you install the plugin, replace the default tables with the ones you saved. Same for the option.
