   I have installed the option theme to the site but when i am adding or updated an existing page, i do not have the custom fields options. How do i add these?

   That has nothing to do with OptionTree, you want to click the "Screen Options" link at the top of your post/page and check "Custom Fields" to show them below the text editor.
