Hey Alex,
NextGen was working fine. I had no problems with it at all.
All of a sudden, if I upload new images, it's stopped generating thumbnails.
The folder has been created and I changed its permissions to 777 to see if maybe it was a permissions issue, but stil not working.
As far as I know, there have been no changes to my server, so a bit stumped as to what might be causing it.

check the memory limit...
A client of mine is seeing the same problem.
In one gallery, five images have been uploaded. The first three have thumbs; for the next two (which are much larger... 2.4mb) no thumbnails were generated.
840 x 560 pixel
840 x 672 pixel
267 x 400 pixel
4000 x 3000 pixel
4000 x 3000 pixel

same issue. I'm using justhost.com for hosting. how would I check to see if memory limit is the issue and would there be a way to resolve if it is?
