For some reason my call to the gallery isn't showing up. Not even printing in the markup. Same thing is happening with WP's built in gallery - almost as if anything in between [...] gets ignored.
Any help would be greatly appreciated.

if also with wp bult in gallery maybe you have some problems with hosting, gd or magic ?
