I was curious if there was a way to modify this plugin to be able to set post order in a certain category.

Phil,
I've had a few requests for this recently so I might choose to publish a plugin I created but never published. It works almost exactly the same as My Page Order, but requires custom code in your template to display them in an order other than publish date.
Watch this URL, http://geekyweekly.com/mypostorder, when I publish it, it will be there.
