   The design calls for the word "through" replacing the start date if the start time has passed, but the end time has not. In other words:
   through Jan 3
   Any way to accomplish this with my calendar?

   Yes, that can be done. You'll want to look into custom filters. My Calendar's filters are documented in my-calendar-core.php.
