Is there a plugin that allows me to use one of my pages to create a gallery for my poems and stories? Preferably something that loads each piece in the page so that I don't have to make separate pages for all of them.

Unless you put all your stuff in a Page content (if that's what you are talking about) - they won't go there.
On the other hand: if you have 153 poems, for example, do you really think it would be a good idea to have them all on one single page/Page?
I would consider using a parent Page = Poems and all the poems as its sub-Pages.
Another solution could be to have a category Poems... and make every poem a post.But no, nothing will "load" each piece anywhere: YOU will put them in either posts or Pages.
