   Hello. Thank you for the great plugin!!!
   CheckOut page: I would like to setup the online store front for US customers only. In doing that, how do I remove the State/County/Province section or change it to list only states in US?
   Thank you for your help!

   on this page of your installation:
   wp-admin/admin.php?page=eshop_shipping.php&eshopaction=states

   don't tick the Use all box, and set it to United States.

   On the countries page however you'll have to delete all but the United States.
