It's not really an issue. I just wonder if this can be made to work with 2checkout.com and can you also do a one click payment where the client does not fill out their info on the site, but it goes straight to either paypal, or 2checkout if they are available?

One click payments are a no. For eShop to work at least some information has to be filled in on the site.
At this time it's unlikely that I'll be adding 2checkout.
We are not adding any more gateways to the core eShop plugin.
