I'm really impresssed with how easy the form building interface is, good show!
However, I don't know that my forms are going anywhere. I only see a "send from" option, but no "send to".
I get confirmation on submission, so I assume something got sent? somewhere? I checked my email I used for my wp install, as well as my domain email with my host. What might I do?

Looks like I am a bit late with my suggestion. We have an intro tutorial showing how to direct messages to different email addresses. The default one should work without any additional settings.

Pretty sure it was on my end, I was having trouble sending mail with a couple other plugins as well. I'll try it again sometime.
