I don't know what I changed but a couple of weeks ago, the mails that were sent through this form were originating from my own name/email address so I have no idea how to mail the person contacting me...
Is there a way to include additional info in the email body, say the sender's email address that he inputs in the form?

Have you edited the plugin file?
Please try by installing a fresh version of the plugin.
nope I haven't edited it.
I had a look to see if I have any active plugijns that change the sending information and all I can find is this plugin: http://coffee2code.com/wp-plugins/configure-smtp to be able to use my Google Apps account for sending emails. THe plugin ahs an option where I can set the default sender name and email but I left it blank which defaults to the wordpress default so this seems not to be the culprit.
using Version 1.2.2 of your plugin. Will try and reinstall, deleting hte old version completely.
plugin re-installed, checked recaptcha api key, it seems I am constantly getting:
