Can I set this to set a particular sidebar on a per-page basis?
I.e. Page A uses sidebar #1, Page B uses sidebar #2, etc.
Looks like I can choose pages by type (post pages, regular pages, etc)... but not quite the Page A, Page B, etc level.

I was wondering about that as well? I need a plugin that does that.
Yes, of course you can.
Go to edit your page, and there you can set the sidebar you need for it.
Easy.
I tried to assign a specific sidebar to a post but it doesn't work. The default sidebar shows up again. Any suggestion?

I have the same problem. With no defaults selected, any wp-page that I assign a specific sidebar loads no sidebar at all.
