   I love the [fergcorp_cdt_single date="ENTER_DATE_HERE"] function for use in posts. Is there any way to tweak it so that
   1) it does not show the time since '__h __m __s ago' after it has reached the date?
   2) changes to a preset text (ie 'EXPIRED') once the date is reached?

   1) no

   2) not currently...although this seems to be a popular request, so i may add it in a future version.

   Note: I am on vacation until August.
