   I must be missing something, but I can't find where to change the template on the Content Type or when creating a post of a certain Content Type. The Page Attributes box with Parent, Template and Order doesn't display like it does when adding a Page.

   To display the custom fields, should I use get_post_meta in my template file?

   Yes you got it. You use get_post_meta in your templates.
