Hey!
So I finally figured out what plugin was causing my Contact Form to not generate a message after sending. I know A TON of other people are having the same issue so I hope this works for them, too.
WP SUPER CACHE
Yes, really!
I deactivated WP Super Cache and Contact Form 7 works properly again.
(It was not working on multiple themes. The one I use primarily is Pagelines Platform.)
