Would be great if there was an option to create different slideshows, so other pages/categories could showcase different Featured Posts for that category.

Do you mean creating multiple widgets?
In fact, you can create as many as you want out of the box, and use them in different or the same widgetized areas.
If I misunderstood you, please let me know.
