Path Definition Location for Themes Directory

Where is the path to themes directory defined in WP?

I have a number of separate WP installs but I want to maintain 1 directory with all the themes and allow each install to pull from a common theme directory on the server. So where can I override the default path?

And, if I were to update WP to a new version, would my custom path tweak get “trashed”?
