I'm building a site that is going to have 1500+ pages when I'm finished. Is there any way to organize them so I don't have to troll though hundreds of pages just to find one to edit?
Maybe a way to collapse the sub-pages within their parent pages in my admin area?

Both Admin/Pages and Admin/Posts allow to you search/filter the list of items.
I looked into that a year ago and at that time at least there was no plugin to collapse pages/posts.
There is a search box in the upper right corner of pages edit page, so if you know part of the name of the page you can narrow the # displayed by using the search box. You can also make more than 20 pages display per screen by using the Screen Options button in the upper right corner - 100 to 200 per screen makes it more manageable.

Its 1500+ pages, I thought about doing them as posts but it doesn't fit the way I need the site to flow.
Would you believe I never noticed the screen options tab? Its not exactly what I had in mind, I was hoping for a plugin to collapse it, but I'll just have to make do with the search. Thanks!
