I cant get the data to show up when i enter an image via the 3.5 up-loader.
The only way i see the data is if i enter the short-code manually. this will take too long for large albums.

Also would like to be able to easily add the data below ALL the images inserted into the post.

OK so with further testing I have found it does work (I think it was a cache issue)

It is now showing at the emd of my posts for ONE image only.

However I would still like the data to show up under every photo automatically. is this possible?

The automatic insert only adds the EXIF for the first image attached to the post. You need to use the shortcode for multiple images.

The docs are at http://www.kristarella.com/exifography/ and there's a tutorial on automatically adding the EXIF as a title to gallery images, which might be able to be tweaked for gallery captions as well http://www.kristarella.com/2012/09/exif-in-wordpress-gallery-image-titles/

I haven't had a chance to look into the new image insert features of 3.5 yet, but with the ability to insert multiple images at a time, it would be good to automatically add for each. I'll look into it.

For my site shutterLIVING.com when i use the automatic insert i find it adds the data to the bottom of the page (ie under all my other photographs, which is confusing for me and imposable for a viewer of the blog to understand that the data refers to the top photo).

Thanks for the tutorials, i am looking at them now, however as none of my posts use gallerias I would love to find a solution that doesn't need to use this.

Would there be a way to insert the data into the caption field of the image? i tired to add the short-code to the caption tap but this only showed the [exif id="5381"] short-code and not the information.

I looked into this recently and couldn't do it. As you noticed, the caption doesn't translate the shortcode. As per the other forum thread, I'll look into automatic insertion with the new WordPress media management. If I figure it out it will be the next update.

There's a plugin called "Description 2 Caption" http://wordpress.org/extend/plugins/description-2-caption/ It takes the IPTC caption of an image and adds it to the caption field, it writes the value to the field and the data is saved in the database. So if you have a little modified gallery (full size images instead of thumbnails) then the caption shows up under ever single image.
The way it works, it could get other EXIF data and write it to the caption field as well.
