This only gives me options to use the themes installed on my blog. When I try it on iPhone it doesn't use a mobile theme. I searched themes for WordPress but I can't find a mobile iPhone theme to install either.

Exactly, this is a plugin for users who have, of have created, a mobile theme and want to enable this easily. No mobile theme is included.
