I have a 'joke of the day' category on my site. The problem is, long jokes take the entirely too much vertical space.

Here is what I want to do: make a custom image as the link to the 'joke of the day'. Go here to view it: http://www.penguinproletariat.com.

So, I post the image with the http link to the joke on a seperate WP 'Page'.

However, this method will eventually get messy, b/c I will have to start creating 'joke of the day page 1, page 2, etc...'

How can I overcome this? Is permalinks the answer? Or do I just not understand what permalinks are?

Permalinks are definitely NOT the answer (see: http://codex.wordpress.org/Using_Permalinks )
On the other hand you could use the categories feature, so create a Joke-of-the-day category and put all your jokes into that, and on the frontpage use the <!--more--> tag to show only the image. Or, as you said, have more Pages for the jokes. Alternatively you can use the "name" anchor to jump to the right joke on a long Page.
I am not really sure what you want to achieve, so my answer is a bit vague.

Thanks for the reply. Can you tell me where to find info on the <!--more--> tag? (I googled it, and no-luck)

It's above the text area in Write Post page - it's a Quicktag.
