cantboilwater.com is my second WP site, and is running on WP 1.01. It's been "safely" hacked so as to allow for easy upgrades in the future (except for the index.php template which is heavily customized - as long as the calls to the core functions don't change, I'll be able to upgrade without changing my index.php much, if at all)...but I'm using it in a way that's not normal.
For example, I'm not displaying categories on the menu bar at all. Instead, I'm using links (and link categories.) This was to get around the fact that nested categories wouldn't show unless the parent category had a post...and I don't want the parent to have any posts. If you check out the site, you'll see what I mean.
I also don't display any posts on the front page. Instead, I have a welcome blurb, along with recent posts (title only), and recent comments.
Oh, and the site is about cooking/recipes.
