What is the best resolution for my header and how do I achieve it before uploading a jpg to my header in wordpress? I've adjusted the size of my header to be 800px and I've tried to make the jpg the same size before bringing it in, but that doesn't seem to do the trick. Any suggestions?

    My site is http://www.blu-boutique.com
If it's relevant I'm using the twenty eleven theme with the nom nom child theme.

Thanks - any help is much appreciated!

Anything above 90dpi is wasted on a web page.

That's down to the graphics application that you are using. The physical dimensions of the header should match the dimensions shown in Appearance -> Header.

Sorry, that sent before I had a chance to finish. Do you have a recommendation for a graphics editor? I've been using gimp - I don't have any of the Adobe Products.

I use GIMP too. :-) You should be able to use Image -> Scale to reduce the dpi and resize the image. I'd suggest doing them as 2 separate operations in that order.
