1. Is there a way to just move one of the sites from multisite or do I have to move the whole thing?
2. I moved the whole thing and it is on the back end of my main site and I can not get the sub domain to work. Any ideas how to fix it? I get an error:
Error establishing a database connection
I have absolutely no clue how to fix this. I have been working on this for 12 hours straight and help so I can get some sleep would be nice.

1. The easiest way to move the content of a single site is to use the Tools / Export function, create a WP export file, and use that to import the site's contents to your new install.
2.Can you confirm what you mean by "moved the whole thing"? There are two main things that need done here; moving the files, and moving the database. I'm wondering if you've just moved the files, but not the database?

If you moved the whole thing to a new server, then the new server would need to have wildcard subdomains.
If you just wanted the SUB site... yeah. You did it wrong. :-/
