   Running sitemap XML 4.0 beta4 on WP 3.1 using MultiSite, I don't have the option to manually rebuild the sitemaps. Ideas?

   The new beta version does not create static files anymore. So basically the sitemap is generated freshly every time. That's the reason why there is no rebuild button anymore.
