I have created a forum but I have too many categories and too many topics! I don't want to spread myself that thin so I want to consolidate topics already commented on into just 2 or 3 categories.
Is this possible once they have been started and commented on?

Yes when viewing the topic as an admin you will see a link that says "move topic".

There is no are you sure before the topic is moved. Could this be added at some stage?
Also after a move I am left with just a blank box which says forum and I have to reselect the forum again. Could you be returned to the forum automatically as some future date? or is it an error on my installation?
