    Could someone please tell me the best place to add metatags and descriptions in this head please, and the best format to use? Thanks in advance

    there is no 'best' - just anywhere in the <head> section;
    possibly after the line with <title>.

    to have different meta descriptions etc per page or post, you will probably need to use a seo plugin.

    Metatags and descriptions can be done with plugins such as All in One or Platinum.
