   How much terms can a taxonomy have without affecting too much overall performance of the site : 100, 1000, more or unlimited ?

   Not unlimited, but a pretty large amount.

   The data storage is a bigger limit than the functionally of the human brain keeping track of 1000+ taxonomies.
