Manual membership assignment until we get our payment gateway back?

I want to use PMPro but hold off on the entire payment aspect until we get our payment gateway/processor back in action.

So we’ll do like we did and have people fill out a Formstack form to be send to someone who contacts them to manually process the payment and then grants them membership on the WP site.

Anyone know how I can do that?
