on this site: http://www.kidma.org/home i would like to make "Rabbi's Blog" and "Articles" (both subpages of Rabbi Kleinberg) be archives of just those posts. (Rabbi's blog being an archive of the Rabbi's blog category and Articles being an archive of the articles category).

I'm using the revved up template.

I have scoured the archives, and read about category templates, and the loop, and excluding items, but the thing is, I am just terriffically lost as to how to do this, and I'm doing this as a freebie favor to them.

Could someone help explain to me how to solve this problem? I don't care if the pages are actually pages, but I need them to stay menu items.

And to sweeten the deal: a box of homemade cookies to the person who can help me. (i am quite serious and really desperate)

I assume you are using the wp_pages_list or something similar to display the Pages in the top menu. In that case I'd go in this way:
    1. create the two categories you are talking about (and make at least one post in them for testing)
    2. You'll probably get a URL for those categories like
    example.com/category/rabbis-blog or
    example.com/category/articles
    3. Write down those URLs
    4. Install the Redirectify plugin. Normally, it should be here:
http://www.redalt.com/downloads/ - but the owner of the site had a crash... so download it from my site:
    http://www.transycan.net/blogtest/download-themes/
    5. Then make those 2 existing Pages of your redirected to the 2 newly created category archives
    6. (optional) if you want them to look different > use the knowledge described on the Category Templates page

thank you. I did that and it works. I'd like the menu to be displayed in those pages and to get rid of the "archive of ________" part at the top. How do I do that?

Seemingly you've solved the "archive of..." part.

For the menu: do you have some restricting "if statement" around the menu code?
If not, is the menu in the header.php file or in the index and other files?
If not in header, then you'll have to copy it over into the category template files, too.
