Hi there and thanks for reading my message!
I am looking for a Professional Theme for one of my new sites. The goal of this new site is to try to increase the relevancy (Quality Score) of my product in Adwords.
My questions:
1. Does it matter which Theme I choose?
2. Which Add-Ons should I add that might help?
3. Are there any additional tips & tricks I should be aware about?

There's no such thing as a theme that is optimised for adword relevancy. It's your content that will (or will not) optimise your site for certain adwords or search phrases. But you might want to review Search_Engine_Optimization_for_WordPress.

Thanks a lot, I am aware of the text. I read many articles about relevancy tips. One of them for instance tells me I should use H1, H2 tags a lot as Adwords likes these things.
I also heard Flash doesn't really help, so I would stay away from that for instance.
Know what I am getting at?

Yes. The link above should cover much of the same thing. Other than that there's nothing that is specific to WordPress that you need to know. Choose a good theme with solid semantic markup (no tabled layouts) and construct your content carefully with good use of logical headings.
