I would like to be able to replace the Title text and description with a branding logo easily for the different sites within my MU.
I think I can edit the Header.php (not quite sure how though)...but wouldn't this change the logo for all sites using that theme?mmm I'm not sure...

use the custom header function. many themes have it built in, including the default.
either way, it's more a theme issue and you should hook into existing functions where the different logos can be uploaded via the backend.
