List Cats Alphabetically, Posts Chronologically with Two Blog Pages

I have a site where I want to have two URLs, each for what appears to be a discrete blog.
Blog URL 1, the posts are daily mutterings of the webmaster. The posts here would belong ONLY to the default category.
AT Blog URL 2, I want to limit the posts to those in “testimonials” category. More about URL 2:
The testimonials category encompasses 12 different collections. I want to list these collections alphabetically with the name of that collection at the start. Within each collection, I want to list the posts chronologically.
I looked around Google and found ways to list categories by name, but these were older post (1.5) and so that seemed a foolish route considering I’m not exactly sure what I’m doing. Further, not really comfortable within the loop, I was still pretty baffled how to pull this off.
Are there any references that you can point me toward? This seems pretty straight-forward, but nothing I’ve seen address the combination of these three issue (two blog URLs, alphabetical categories, chronological posts).
