list categories by alphabet?

    we are redesigning my client’s site: http://www.competentcounseling.com/

    he wants to keep the scroll over where it says “click here to find over 700…” and how it lists the categories as such when you scroll over. i did not make his old theme so i am wondering if anyone knows the code on how to do this.
