    Can I give him almost unlimited access without allowing him to change my form settings so that my customers pay into his account and not mine?

    You need to do your homework and ensure that you can trust anyone that you employ to work on your site. Wherever possible, set up new logins for her/him that can be removed when the work is completed.

    Create a separate WP admin and FTP account.
    There is no need of giving access to the database, that’s rarely required. You can install a Database Backup plugin so that whenever your developer is working on your site he/she can create a backup of the db before making any changes.
