In my search for this capability (I can delete the page to accomplish that, but I prefer to leave it "just in case"), I found several plugins that offer this feature.
For now, however, I prefer keeping my first ever WordPress installation as close as possible to the pristine released package.
Is there a way to exclude a page without installing a plugin?
That's an interesting way to look at it. I always thought modifying your theme's code to be more invasive than using a plug in, which, as the name suggests, can be "unplugged" with no harm to your site.
However, just as safe is to use a custom menu.

Oh, by no means did I mean to modify the theme's code. I was only looking for a button or a menu item in the Admin's console that I may have missed.
If that's not possible, I will try using a plugin, but most of them now say that they were not tested with WordPress version (3.3.1).
I may just delete the page as well.
please look at the link, custom menus are stock with wp, there's admin settings for it and everything.

Why not just set the page to "draft". Then it won't be published for people to read. When you want it back, publish it again.
often times people want to link to a page and still have it accessible without showing it in the main nav, wasn't sure.

Ah, true... I guess I figured if you wanted to see the page for whatever reason, you could use the preview/view link in the admin backend.
